Romanticising winter: My current craving
My fascination with Mac and Cheese has been growing for a long time, but I’ve never tried it. Many years ago, I tried it at a cookout in church and liked it. I only tried it again last Christmas when I decided to try it again, but I cooked it myself this time. I made it for our Christmas dinner as we were having family over. It was delicious the first time, and I ate it all, and then I made another one to keep, and somehow that was finished before Christmas, too. Then I made another, which I stored in the freezer, but we did not eat it as part of Christmas dinner because there was already too much turkey and duck roast.
It has been nearly a year since I last had it, and I am craving it again. Here is how I made mine, following a recipe I found online with my little twist.
Macroni cheese
Ingredients
Macaroni
Butter
All-purpose flour
Whole milk
cheddar cheese, grated
Salt and pepper or seasoning of choice
Ground nutmeg
Diced Bacon / Breadcrumbs

Drain and set aside.Step 2: Prepare the Cheese SauceIn a large saucepan over medium heat, melt the butter. Stir in the flour to form a roux. Cook for about 2 minutes, stirring constantly to prevent burning. Gradually add the milk, whisking constantly to avoid lumps. Cook until the sauce thickens, about 5 minutes.Step 3: Add the CheeseRemove the saucepan from the heat and add the grated cheddar cheese. Stir until the cheese melts completely. Season with salt and pepper to taste.Step 4: Combine the Pasta and SauceFold the cooked macaroni into the cheese sauce until well coated. Then, drizzle with olive oil and scatter the diced bacon over the top.Bake the macaroni and cheese in a preheated oven at 180 degrees Celsiusfor 20-25 minutes, or until the top is golden and bubbly
